Harvest in Bellagio features farm-fresh, sustainable ingredients. Menu selections include charcuterie, vegetarian dishes, stone oven-prepared seafood, grilled dry-aged beef, organic poultry, seasonal market-driven sides and adventurous small bites. Health-conscious diners will appreciate the quality and freshness of Chef Roy’s creative dishes that fall within six distinct concepts:  Garden, Ocean, Ranch, Boards, Stone Oven, Rotisserie and Snack Wagon.
